Cranberry Chutney

There is no seasonal fruit I love and get excited about more than Cranberries. This tangy, bite size fruit can be enjoyed in a variety of ways such as a trail mix snack, topping for oatmeal and cereals or savory dishes such as grilled fish.

In addition to its great flavor, Cranberry is a fruit high in Vitamin C, Potassium and B-Vitamins with “BIG” health benefits like managing UTI’s, lowering blood pressure and fighting free radicals that may cause cancer growth.

 

What is chutney made out of?

A chutney is usually made from a mixture of fruit, spices, sugar, vinegar, a bit of spice and cooked down. The reduction will intensify the flavors, thicken the mixture and the sugar will balance out the tartness. Chutney is great served along side a cheese and charcuterie board, accompany roasted meats or compliment cheeses.

  • In a medium saucepan combine all ingredients and cook on medium high heat until bubbly.
  • Reduce to a simmer and cook an additional five minutes or until chutney is slightly reduced in the pan. Do not forget to remove the cinnamon stick at this point.
  • Remove from heat and let cool completely before placing chutney in an air tight container. Refrigerate for up until a week.

Notes

"If you do not have Red wine vinegar available, white vinegar is a great substitution. Both have similar acidity levels to aid in the cooking process of breaking down the cranberries and apples. Red wine vinegar just has a slight sweetness in taste."
