  • Prepare the pasta according to package instructions, draining well and set aside.
  • In a large skillet, heat oil on medium high heat. Add ground turkey and seasoning and cook 5-7 minutes stirring to combine seasonings.
  • Add onion, mushroom and bell peppers to ground turkey mixture. Cook until veggies are tender and translucent.
  • Add vegetable stock, heavy cream and black pepper to the ground turkey and veggie mixture. Stir and combine all ingredients well to make a creamy sauce.
  • Add drained Penne pasta and Baby spinach. Simmer for another minute or two on low heat just until spinach is cooked but not too wilted.
  • Serve and Enjoy.
