No Basil Spinach Pesto

Pesto is a sauce or topping that is traditionally made from Basil, garlic and pine nuts. The versatility of this sauce is awesome because you can use for endless recipes on poultry, seafood, pizza or pasta dishes.

I always have Fresh Spinach handy and actually stock up when they are BOGO (Buy 1 Get 1 Free) at the grocery store. This recipe is more cost effective for me since basil can cost slightly more for a smaller quantity.

  • In a medium size sauce pan on low heat, toast pine nuts for about 3-4 minutes. Pine nuts will have a slight brown tint in color for a nutty flavor.
  • In a food processor add spinach, parsley, garlic cloves, toasted pine nuts, salt, pepper, olive oil and lemon juice.
  • Blend until combined and mixture is vibrant green color. You can also pulse the ingredients for a coarser texture.
  • Use sauce to add to your favorite pasta or pizza dishes or top seafood and poultry items.
