Hi, I’m Loni, also known as the Caribbean Cooking RD (Registered Dietitian) and I created this platform to bring you recipes (sweet, savory, beverages and everything in between) from the life of a Registered Dietitian.

Currently, I work as a Clinical Dietitian with Morrison Healthcare in the acute care setting. I absolutely love being a part of an interdisciplinary team at the hospital, providing nutrition therapy to treat an array of chronic diseases for people within the local community. The role of the a Registered Dietitian is to use evidence based research and validated assessment tools to meet the individual nutritional and wellness needs of others.

I am from one of the most beautiful and unique places in the world, the Virgin Islands, which is home to some of the most beautiful people and amazing cuisine in the Caribbean.

White sandy beaches, crystal clear blue water and lush tropic greenery are just an example of some of the images that come to mind when I speak of my HOME!!

I currently reside in South Florida, which is a melting pot for all types of cultures especially the Caribbean. I obtained both Culinary Arts & Hospitality Management degrees from Johnson & Wales University. I have worked at some of the best resorts in Orlando, Miami and Tortola, BVI.

Obtaining my Master’s Degree in Dietetics and Nutrition seemed natural for me as I have always loved the idea of combining two things I am truly passionate about, preparing healthy, nutritious food with hospitality and service within the community.

Hibiscusly Yours Nutrition was created with the vision of being a source for recipes, nutritional insight from a Registered Dietitian/Clinician and wellness for all aspects of your being (mind, body and soul). Nourishment is essential to life and here at Hibiscusly Yours, I strive to continue being a healthcare professional that is dedicated to the community through my skills and services.

Blue Hibiscus Flower

Hibiscus flowers are home to tropical climates such as Hawaii, Latin America and you guessed it the Virgin Islands!!

The colors are vast including Red, Yellow, White and Blue which portray the hues of the Rainbow and how the various pigments of nutritious food is symbolized.

The use of this versatile plant is endless including making paper, construction and as a symbol of “Welcome”. The Hibiscus Flower is also incorporated into food/beverages as it lends a tartness once the plant is dried.
